Akira Oshima, the founder of the Okura's Yamazato and Sazanka restaurants, is generally regarded as the leading authority in Europe on Japanese cuisine. His true heart lies with traditional kaiseki cuisine, the Japanese haute cuisine, which he has elevated to a fine art at ‘his' Yamazato restaurant. It was with this classic cuisine that, in 2002, Oshima-san (‘san' is a Japanese honorific meaning ‘Mr' or ‘Mrs') became the first Japanese chef in Europe to be awarded a Michelin star.
